Hey there, it’s me, jes! I’m here, with another cookie recipe—this time for Christmas! 🎄

You probably already have all these ingredients at home. The best part? These cookies can be prepped ahead of time! The dough keeps in the fridge for 2–3 days, and once baked, you can store them in a ziplock bag for a couple of days. Perfect for prepping before Christmas and all the chaos that comes with it 🥹.

I have a dinner with friends on Saturday to celebrate Christmas early—Friendsmas (?)—I think that’s what the kids/Gen Z folks are calling it these days—Anyway, one of our plans is to decorate sugar cookies. So I put myself in charge of making the sugar cookies for 8 people and grabbing all the edible decorations: coloured icing, sprinkles, chocolate chips, tiny marshmallows, and all that fun stuff. 
Oh… the perks of prepping ahead! 
(Because the last thing I want is scrambling on the same day while figuring out my outfit, right?😬)

Alright, enough chatting. Here’s the recipe so you can try it at home. These are super easy and a great way to get into the Christmas spirit:

Ingredients
  

  • 230 g or 2 sticks of unsalted butter softened (leave it at room temperature for a couple of hours, or microwave it in 10–15 second intervals until soft)
  • 200 g of white granulated sugar
  • 2 eggs large
  • 2 tsp of vanilla extract
  • 480 g of all-purpose flour
  • 1 tsp of salt
  • 1 tsp of baking powder

Instructions
 

  • In a bowl or stand mixer with a paddle attachment, mix butter and sugar for a few minutes until the mix is light and airy. Add the vanilla extract and the eggs, one at a time, and mix well.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture on low speed. If there’s still some flour, stop the mixer and finish mixing by hand. Don’t overmix, that way you will keep your cookies soft!
  • Spread the dough to about 2 inchs thick, cover it with plastic wrap to prevent drying, and chill in the fridge for at least 2 or 3 hours.
  • Preheat the oven to 360 F. Roll thedough to about 1/4 inch thick on a floured surface to prevent sticking. Cut out shapes with cookie cutters (I got mine on Amazon, but you can find them on the dollar store too).
  • Place cookies on a baking sheet lined with parchment paper or a nonstick sheet. Bake for 12–15 minutes, until the edges are slightly golden brown.
  • Let the cookies cool for 5–10 minutes before eating. If you’re decorating with icing, wait at least 20 minutes to cool completely.
